ADZUKI BEANS AND RICE

1          cup adzuki beans
1          medium onion,
2          cloves garlic
1          teaspoon salt
1          tablespoon olive oil
1          cup rice
1/2       cup vegetable broth
1/4       teaspoon chili powder

Wash beans and cover with water. Bring to a boil, remove from heat and let soak for one hour. Drain and add sufficient cold water to cover the beans. Add chopped onion, crushed garlic cloves and salt. Canned beans may be used. Bring to a boil and simmer for 1 1/2 hours until tender. Add extra water if necessary. Place bean mixture in a blender and puree till smooth. Cook rice using broth as the liquid. Add chili powder to cooked rice and set aside. Heat olive oil in a heavy skillet and add pureed bean mixture. Simmer for 5 minutes, stirring frequently. Stir in rice and heat for a further 5 minutes.
Serve with a fresh salad.

Notes: Excellent source of Vitamin B1, Folacin, Niacin, Iron, and Zinc.
Good source of Vitamin A and B6.
