BEEF AND VEGETABLE STEW

1 1/2    pounds lean beef, cut in pieces
2          cups beef broth
2          medium onions, cut in quarters
1          bay leaf
1          teaspoon thyme
1/2       teaspoon oregano
1/2       teaspoon marjoram
1/2       teaspoon black pepper, fresh ground
4          medium sliced carrots
1          cup frozen peas
2          tablespoon fresh chopped parsley
1/2       teaspoon salt
2          cloves crushed garlic

Place the flour and salt in a large bag and add the beef so it is coated. Remove from the bag. Heat the oil in a large casserole dish and brown a few cubes of beef. Set aside and brown some more until all are done. Add the onion, cover the dish and sauté for 3-4 minutes. Add the beef broth, bay leaf, thyme, oregano, marjoram and simmer in the covered dish for 1 1/2 hours. Add the carrots and simmer for another 30 minutes. Add the peas and seasoning to taste. Serve hot.

Notes: Excellent source of Vitamin A, B6, B12, Folacin, Niacin and Zinc.
